The Year 10 Hospitality and Catering class were lucky to be treated to a demonstration of fish preparation and cooking from Chef Tom of Tom’s Table in Clitheroe – Tom demonstrated how to gut and fillet whole mackerel and then showed the class how to cook and serve it. A highlight was using a blowtorch to scorch the fish!

Although many of the class were initially very dubious about handling the fish, they rose to the challenge and produced their own mackerel dishes. Afterwards, they all agreed that it was a fantastic opportunity and many of them said it was the best lesson ever.
